Where the tikka masala is the favourite British curry, Butter Chicken is the Maharaja of curries in India and features at restaurants, weddings and everywhere in between! The intense flavours of slow-cooked sweet and tangy tomatoes, garlic, ginger, yoghurt, cream and spices come together to make a heady harmony of flavours that are actually addictive. Once you start, you can’t stop especially when served with delicious hot The Spice Tailor naans!

Although our sauce is called Classic Butter “Chicken”, it is actually vegetarian and very versatile. This sauce goes so well with almost everything and definitely anything that works with tomatoes.

Cooking Instructions

3 SIMPLE STEPS | READY IN 10 MINS


Preparation: Cut the chicken, meat, paneer, fish or vegetables into generous sized pieces.

  1. Heat 1 tsp of oil in a pan, add the whole spices and chilli (if using) and cook for 20 seconds.
  2. Add chicken, meat or vegetables and brown lightly before adding the base sauce. Simmer for 1 minute.
  3. Stir in the main sauce (and fish or prawns if using), and simmer for another 3-6 minutes or until your ingredients are cooked.

Use these handy tips to customize your dish:

  • Add a knob of butter for that proper restaurant experience.
  • Try adding some large cubes of red onion and green peppers in with the protein for a crunch and flavour.
  • For a smoky flavour, grill skinless chicken breast or thighs marinated in the base sauce, until charred in places and then finish cooking in the sauce.
