This curry is inspired by the cuisine of the coastal region on India’s south-west coast. Our Keralan Coconut Curry balances a lightly spiced, coconut-based sauce with sweet tomato and tangy tamarind to create a delectable and harmonious dish.
Perfect with seafood, chicken, eggs or vegetables.

Origin story
The Southwestern Indian state of Kerala is famed for its abundance of beautiful coconut trees and its lush spice gardens.
The region has a truly fantastic cuisine, which builds on the wealth of delicious local ingredients, as well as on abundant and varied historic influences from trade and migration.
Our Keralan Coconut Curry is an ode to coconut and is flavoured with curry leaves and mustard seeds and soured with tomato and tamarind in a celebration of all the things we love about the flavours of Kerala.
Information
Cut your chosen protein or vegetables into generous pieces.
- Heat 1 tbsp. of oil in a small pan, add spices and cook for 20 seconds (use the chilli from spice pouch for extra heat).
- Add the protein or vegetables and brown lightly (if using fish or seafood, hold back and add this along with the main sauce in step 3).
- Stir in the main sauce along with 50ml of water and simmer for another 3-5 minutes, or until the protein or veg is cooked through.
Serves 2-3 with naans, rice or parathas.

Please ensure food is fully cooked and piping hot throughout before serving.
If you don’t like whole spices, grind these in a pestle and mortar and add them with the main sauce in step 3 (before final simmer). Alternatively, if left whole, remove them with a spoon before serving.
Use these handy tips to customise your dish:
- Try fish steaks for a fuller flavour.
- Make with seasonal vegetables and rice noodles for a great vegetarian meal.
- Add a handful of halved baby tomatoes for a change.
- Finish the curry with a little roasted, flaked coconut.
- Add a little water if the sauce gets too thick.
- Add a little tamarind, vinegar or lime juice for extra tang.
