The vibrancy of this dish really comes to life with its mix of a warming spice blend, punchy ginger and fragrant lemongrass, perfectly balanced with the tang of tamarind and lemon, resulting in a comforting Vietnamese-style curry which is so pleasing to eat.
Information
Cut your chosen protein or vegetables into generous pieces.
- Heat 1 tbsp oil in a small pan, add the spices and cook for 20 seconds (use the chilli from spice pouch for extra heat). Then, add the onion (chunky dice) and cook for a minute.
- Add the protein or vegetables and brown lightly (if using fish, or seafood, hold this back and add this along with the main sauce in step 3). Then, add the base sauce and fry for 1 minute.
- Stir in the main sauce, add bamboo shoots and simmer for another 3-5 minutes, or until the protein or veg is cooked through. Finish with a squeeze of lime.
Serves 2-3 with rice or noodles.
Please ensure food is fully cooked and piping hot throughout before serving.

If you don’t like whole spices, grind these in a pestle and mortar and add them at step 3 (before simmering). Alternatively, if you left the spices whole, remove them with a spoon before serving.
Use these handy tips to customise your dish:
- Parboil some diced potatoes and add to simmer in the sauce.
- Finish with 1 tablespoon of coconut milk and a pinch of shredded coriander.
- For a delicious noodle soup, add 200ml of chicken or vegetable stock while cooking and serve over cooked rice noodles.
- Try adding a dash of fish sauce for a hit of umami.
- Garnish with Thai basil, fresh sliced chilli and squeeze of lime for a fragrant spicy hit.
