This meal idea is a real winner. The deeply delicious tikka masala flavours really lift the sausages, beans and veg. Add the chorizo for extra smokiness.
Tailored to Taste
Anyone who likes sausages will love this one-pot sausage, chorizo and bean casserole. The flavours go together really well and are classic combinations in many parts of the world. The lightly flavoured tomato sauce really holds all the ingredients together and, even though it isn’t a quick meal, the casserole cooks without much fuss. You can use veggie sausages instead if you prefer. This makes a wonderful weekend brunch or dinner, all you need is a little crusty bread to serve it with.
Ingredients
  • 1 packet of The Spice Tailor Original Tikka Masala
  • 4 sausages of your choice, ideally with a good flavour (you can add another 2 sausages if you are serving three, there is just less sauce)
  • 60g chopped chorizo
  • Handful of baby tomatoes 
  • ½ tin of cannellini beans, drained 
  • 2 handfuls chopped kale or baby spinach 
  • Seasoning to taste
Method
  1. Heat the chorizo over a low-medium heat in a pan. Once the bits release their oil, add the sausages and fry for 3-4 minutes - or until lightly golden. Add the spices from the sachet in the kit, including the chilli for optional extra heat; cook for 10 seconds.
  2. Add in both sauce pouches, they might splutter, so be careful. Add a good splash of water, stir well to mix and bring to a simmer. Cook, covered, over a moderate flame for 15 minutes - or until your sausages are cooked through. Keep an eye on it and give it the occasional stir. Add the tomatoes in half way through and, if it looks like it is drying out, add another splash of water.
  3. Stir in the beans and kale and simmer for a further couple of minutes. The sauce should be creamy. It if it thin, cook off excess liquid over a high heat, stirring often.
  4. Taste and adjust seasoning and serve.
