Paneer Tikka Masala with Roasted Tomatoes
- 1 pack of The Spice Tailor Original Tikka Masala
- 1 tsp. olive oil
- 10 – 15 vine tomatoes
- Sea salt
- 1 tbsp. vegetable oil
- 200g paneer, diced
Optional: Indian flatbreads or rice, coriander to garnish
- Preheat your oven to 200C/Fan 180 ºC /Gas Mark 6.
- Drizzle 1 tsp. of olive oil across the tomatoes. Place on a baking tray and pop into the oven until lightly blistered, approx. 10-12 minutes. Sprinkle with a bit of sea salt.
- While the tomatoes are cooking, place a pan over medium-high heat and add in 1 tbsp. of oil. Add the spices from the spice pouch and cook for 20 seconds before adding the paneer. Gently sear the paneer on both sides, then add in both sauce pouches and a splash of water, and simmer on a medium heat until the paneer is soft.
- Serve the paneer tikka masala with the roasted tomatoes on the side, and your choice of Indian flatbreads or rice.
