Prawns go well with the delicious coastal flavours of South India. You will quickly add this easy dinner idea to your weekly repertoire.
Tailored to Taste
A truly delicious prawn curry that is really easy to do but special enough to impress friends with. If you have the time and inclination, you can fry the prawn shells first and add a little water to make a stock from which you can add back into the pot. Delicious with any simple rice dish or Indian breads.
Ingredients
  • 1 pack of The Spice Tailor Southern Pepper Curry
  • 1 tsp. vegetable oil
  • 250g fresh uncooked prawns, shelled, deveined and rinsed
  • 1" cube block of coconut cream or 2 tbs. creamed coconut (or to taste)
Method
  1. Heat the oil in a medium sized non-stick saucepan and the spices from the spice packet and cook for 20 seconds. Add the base sauce and cook for a minute or so before adding the main sauce, the prawns and a splash of water. Bring to a boil then simmer gently for 2-3 minutes.
  2. Add the coconut and continue cooking until the prawns are cooked through, another 1-2 minutes, depending on their size. Serve hot.
