COOKING A BUTTER CHICKEN FOR 2
- Heat 1 tbsp oil and 1 tbsp butter and fry 1 small, chopped onion. Add in and cook 2 chopped garlic cloves.
- Blend 1 large tomato and 20g cashews (ideally soaked), add to the pan and cook, stirring often, until thick.
- Add 200g chicken, seafood, meat or veg and 3 tbsp Butter Chicken paste. Cook for 1 min.
- Add 125ml water and 1-2 tbsp double cream. Simmer until cooked.
For a Classic Butter Chicken Curry for 2 using 50g
paste:
- 1 small onion, chopped, 2 garlic cloves, chopped, 1 medium tomato quartered, 25g cashew nuts, 2 tbsp. double cream, 200g chicken, prawns, firm fish, lamb, vegetable or other, butter.
