Thai Red Curry with Prawns and Green Veg

This really easy Thai Prawn curry takes just 10 minutes to cook but is full of flavour and veg. A perfect midweek meal.

Ingredients

1 pack of The Spice Tailor Thai Red Curry
1 tbsp of vegetable oil
200g of raw, cleaned prawns
75g of red capsicum , sliced
50g of sugar snap peas
100g of Tenderstem broccoli

Everyone loves a Thai red curry; a delicious balance of the sweet, spicy and salty flavours held together in perfect harmony with the help of coconut milk. This is a typical red curry made with prawns and some vegetables to make it a one pot dish. Feel free to alter the fresh ingredients to suit your tastes.

Method

Step one

Heat the vegetable oil in a pan and fry the whole herbs and spices for 10 seconds.

Step two

Add the vegetables and sauté for 3-4 minutes.

Step three

Add the base sauce from the smaller pouch and fry for 1 minute.

Step four

Add the coconut milk from the larger pouch and 2 tbsp of water.

Step five

Bring to a simmer and add the prawns. cook until done (around 2-3 minutes depending on size).
